Gluten analysis

Quantification of gluten content in foods to ensure compliance with (EU) regulations No 828/2014 (https://www.boe.es/doue/2014/228/L00005-00008.pdf) following requirements to inform to consumers about the presence of gluten in food, ensuring its suitability for the celiac community.

According to the needs of our clients, the analysis can be carried out through four different methods:

  • ELISA Sandwich R5 analysis: gluten quantification method by the National Accreditation Entity (ENAC) under the UNE-EN ISO 17025:2017 standard. This analysis follows the Codex Alimentarius Requirements.
  • ELISA Competitive G12 analysis: gluten quantification method designed for the analysis of hydrolyzed samples. Single method capable of detecting the immunotoxic peptides generated in hydrolysis, for example, in beers or baby food.
  • ELISA Competitive R5 analysis: gluten quantification method designed for the analysis of samples hydrolyzed by the R5 antibody.
  • Western blot analysis with anti-gladin 33mer (G12) antibody or anti-gladin 33mer (A12) antibody, that allows to visually detect patterns the proteins components of the gluten and its integrity, and therefore to identify the origin and integrity of the gluten.
